Yolks
- For: 24 servings
- Time: 60 minutes
Ingredients: 12 egg yolks 200 grs sugar 100 ml water Glazed sugar
Preparation:
- Put the sugar and water into a pot, place in fire and cook until you get a soft ball shaped syrup.
- Place the yolks in a thick pot and stir them with a wooden spoon.
- Pour the syrup on top and join them slowly at a low flame, mix well for it not to stick.
- Pour on top of a marble table for it to cool off quickly and extend it in a thin layer.
- Once it is cold, pick it up and make a ball, sprinkle the glazed sugar on the table and roll it in a thick string shape, cut it in the shapes of egg yolks and sprinkle sugar on top.
