Yogurt and Yogurt Ice Cream Recipes
Yogurt is one of the most ancient known fermented milks known of. It has been eaten in countries of the Middle East since centuries ago and more specifically in the coast of the oriental Mediterranean.
Yogurt is made by coagulating milk and biological acidification through lacteous cultures of the spices Streptococcus thermophilus and Lactobacillus bulgaricus, and comes from milk that has been submitted to thermal treatment before being fermented. The action of the lacteous culture gives the yogurt its essential characteristics, which is a product that coagulates quickly, acidity and does not contain alcohol.
Ice cream is a beaten product that is made out of air bubbles limited by thick screens of a uniform mixture of proteins, sugars, salts and other components and by globules of mixed fat and small ice crystals.
The traditional classifications of ice cream include cream ice cream, milk, fruit, Popsicles and others, but they do not mention dietary and yogurt ice creams, which have gained a lot of importance in the last years due to its increased acceptance. Because of this these types of ice creams can be included in the classification of special ice creams.
Yogurt ice cream is becoming more demanded because of its lightness, which makes it very attractive. However, because of the special characteristics of this “live” product it requires of some special precautions during the elaboration process of mixture and of the final product.
Yogurt ice cream consists of half yogurt and half ice cream. You have a choice of making it or buying it already made. In either case, as we mentioned, this site includes the process of making yogurt for those that choose to make it themselves.
