White Chocolate and Coconut Foam

 

Ingredients
50 grams of coconut shavings
100 grams of liquid cream
100 grams of white chocolate bar
250 grams of curd
2 centiliters of rum
1 ripe mango
1 tablespoon of chopped pistachios
  • Preparation time: 25 minutes
  • Cooling time: at least 1 hour

Preparation

  1. In a pot heat the coconut shavings and the liquid cream over low heat for one minute while continually stirring.
  2. Take the pot off the heat and allow it to sit and cool for 30 minutes.
  3. While waiting for it to cool, grate the chocolate bar. Then mix the chocolate with the curd. Add in the coconut and the rum. Then place this to sit in the refrigerator for 30 minutes. 
  4. When the dessert is ready to be served, peal a ripe mango and slice it.
  5. Place the mango slices on the serving plates as a decoration. Put a cooking spoon in cold water for a few seconds, and then grab a spoon full of the foam and put it on the place beside the mango slices. Decorate with chopped pistachios.
