Vegetables in Ginger and Orange Sauce Recipe

Ingredients 45 grams butter 2 onions cut into eighths 1 teaspoon garlic powder 2 teaspoons crushed ginger 1 teaspoon chopped coriander 3 large turnips peeled and cut into cubes 1 large carrot, peeled and cut into 1 cm slices 1 sweet potato cut into pieces 6 peeled potatoes 1 ˝ cup (375 ml) orange juice 1 cup (250 ml) vegetable broth 3 teaspoons cornstarch, dissolved in 3 tablespoons water Black pepper 1 chopped leek 2 tablespoons finely chopped onion 1 tablespoon finely sliced orange skin
Preparation
1. Fry the onions and the garlic in the butter for 3-4 minutes, add ginger and coriander, and cook for 1 more minute.
2. Add the turnips, carrots, the sweet potato, the potatoes, juice and broth. Cover and, when it starts boiling, turn down the heat and cook for 25 minutes. Take the vegetables out and set them apart.
3. Add the cornstarch and the pepper. Let it boil. For 5 minutes and add the vegetables, the leek, onion and orange skin. Cook for 5 minutes and serve hot.
