Turkey in Chili Sauce and Chocolate

 

One of the most known Mexican dishes is Mole Poblano de Guajalote and it is normally served in celebrations and national parties. A real mole or chili sauce must be made with at least three different varieties of chili and each one of these has its own spicy flavor. But to make it simpler, we are going to give you one example. This could be considered the softest way to make it, however if you want to make it spicier you can increase the amount of chili you put into it.

Ingredients:
3 kg of diced turkey
1 medium sized onion, peeled and diced
2 mashed garlic teeth
Water
2 small teaspoons of salt
1 small teaspoon of black pepper

Sauce:
6 serving spoons of oil
4 green chili’s, without the seeds and diced
2 onions, peeled and diced
½ teaspoon of small cumin seeds
½ teaspoon of ground pepper
1 teaspoon of cilantro seeds
1 teaspoon of powdered cinnamon
6 cloves
50 gr. Of white almonds (previously peeled in hot water)
3 big serving spoons of sesame seeds
50 gr. Of tortillas
40 gr. Of bitter sweet chocolate
Salt
Pepper

Garnish:
1 tablespoon of toasted sesame seeds

Preparation
Place the pieces of turkey in a casserole with the onions and garlic. Fill it with water and cover it all and add in the salt and pepper. Cover the casserole and bring it to a boil, then, let it boil at very low heat for an hour or until the meat is tender. Take the meat out of the broth and let it cool down; then remove the bones and the skin from the turkey and cut it in pieces of about two and a half centimeters each.

Heat up half of the oil for a sauce in a big casserole and slowly fry the chilis, the garlic and the onions for about five minutes. Add in the rest of the ingredients except for the tortillas, the chocolate and the condiment along with half a liter of turkey broth. Cover and let it boil at low heat for about twenty-five minutes, stirring it occasionally. Break up the tortilla into this sauce and let it cook for another five minutes.

Blend up the sauce in a blender or electric beater, then add in the chocolate and let it melt, mixing it if necessary. Heat up the rest of the oil in a big casserole and quickly fry the pieces of turkey for five minutes; then pour the sauce over it. Let it cook over low heat for another ten minutes mixing it frequently. You can add in more spices if you like then serve it on a serving dish and sprinkle some toasted sesame seeds over it.

Serve with rice, tortillas, and guacamole sauce.
