• Total amount of soluble solids = 8 Brix degrees

Amounts

• Tomatoes – 10 kilograms

• White sugar – 10 kilograms

• Citric acid – 40 grams (0.4% of the amount of peeled fruit)

• Potassium sorbate – 6.99 grams (0.65% of the amount of jam)

• Sodium benzoate – 6.99 grams (0.5% of the amount of jam)

Quality Parameters

• Total amount of soluble solids – 65 Brix degrees

• PH – 3.7

 Outcome

• Initial state of the fruit: 12. 7 kilograms – Outcome: 78.74%

• Peeled fruit: 10 kilograms

Jam Outcome – Peeled Fruit
Outcome: 15,2 kilograms of jam = 1.52 kilograms of Jam/kilogram of conditioned fruit.
