- Citric acid – 40 grams (0.4% of the amount of peeled fruit)
- Potassium sorbate – 6.99 grams (0.65% of the amount of jam)
- Sodium benzoate – 6.99 grams (0.5% of the amount of jam)

- Total amount of soluble solids – 65 Brix degrees
Outcome
- Initial state of the fruit: 12. 7 kilograms – Outcome: 78.74%
- Peeled fruit: 10 kilograms
Jam Outcome – Peeled Fruit Outcome: 15,2 kilograms of jam = 1.52 kilograms of Jam/kilogram of conditioned fruit.
