Tootie Fruity Cake Recipe
Ingredients 125 grams of butter ½ cup of extra fine sugar 2 tablespoons of finely grated orange peels ¾ cup of all-purpose flour 2 eggs 1 tablespoon of freshly squeezed orange juice 1 cup of white fresh bread crumbs 1/3 cup of raisin cherries, pitted and in pieces 1/3 cup of apricots, in pieces 1 tablespoon of fruit varied fruit skin, in pieces
- Preparation time: 20 minutes
- Baking time: 45 minutes
Preparation
- Preheat the oven at a moderate temperature of 180 degrees C. Grease a round 20 centimeter in diameter mold with melted butter or oil. Cover the base and the walls with wax paper.
- Put the sugar, the butter, and the gratings in a small bowl and beat it with an electric mixer until you obtain a light creamy mixture. Add in the eggs gradually one by one while continually mixing.
- Pour the preparation into a big bowl. Then add in the orange juice and the sifted flour and stir it with a wooden spoon. Add in the bread crumbs, the raisin cherries, the pineapple, the apricots and the varied fruit skin. Stir until all of the ingredients are well mixed together.
- Use a spoon to scoop the mixture into the baking mold and smoothen the surface out with a spatula. Bake the cake for 45 minutes or until when poking a wooden pick into it, it comes out clean. Let it sit for 10 minutes after it is ready and then put it over a metal rack and allow it to cool. Cover it with butter and citrics cream and sprinkle it with nutmeg.
