Strawberry Sherbet Recipe
Ingredients: 1 kg of strawberries ¼ cup of water 225 grs of sugar 1 lemon 2 egg whites
Preparation: Wash the strawberries and remove the stems. Place some aside for the decoration. The rest is placed in a bag and mashed with a puree maker.
Place the water and sugar in a container and heat up until it candies, let it thicken a lot. Remove from fire and let it cool off. Add the strawberry puree together with the lemon extract.
Beat the egg whites untill they stiffen in a double sauce pan until you get a very consistent cream. Add this meringue to the rest of the preparation mixing it slowly. Pour the mix into a sherbet container removing it every ½ hour for it to thicken.The sherbet is served in previously cold tall glass cups.
Form 2 sherbet balls with two spoons within each cup which are decorated with the reserved strawberries
