Strawberry Mille Feuille
Ingredients 4 eggs 125 grams of confectioner’s sugar 1 teaspoon of vanilla extract 150 grams of whole wheat flour, sifted 60 grams of melted and cooled butter Chantilly 250 grams of strawberries, stem removed 125 grams of whipped cream Strawberries, for decorating
Preparation
- Put the eggs, the sugar and the vanilla in a double boiler over medium heat. Mix until it begins to thicken and has doubled in volume, (this will take around 5 to 10 minutes).
- Take it off the heat and continue mixing vigorously for four more minutes or until the mixture cools to normal temperature and is really thick. Add in the flour, then the butter while mixing as quickly as you can. Immediately after pour this mixture into a 20 centimeter previously greased baking mold with a baking sheet.
- Bake at a medium temperature of 180 degrees for 25 to 30 minutes or until the dough is ready: (this can be done by slightly pressing down on it with your finger; if the surface moves back, it is ready to be taken out of the oven). Let it cool over the aluminum grill.
- Divide each of the pies in two. Spread layers of Chantilly cream and strawberries on each layer. Decorate the surface with whipped cream and more strawberries.
Serves 8.
