Steamed Coffee Pudding
This is a very light steamed pudding that can be served with whipped cream, with a touch of coffee liquor, or with hot coffee butterscotch sauce.
Ingredients: 140 ml of thick cream 4 tablespoons of strong black coffee 140 gr. of white bread crumbs 110 gr. of butter 55 gr. of minced almonds 110 gr. of sugar 4 eggs, beaten
Preparation: Mix the cream with the coffee and then pour it over the bread crumbs and let them soak for around 10 minutes; then mix everything up well together.
Mash up the butter and then, preferably use an electric mixer to beat the breadcrumbs, with the coffee and cream, the almonds and sugar; continue beating until the mixture is fine and uniform. Little by little add in the eggs while still beating.
Pour it all into a one-liter pudding mold. Cover it with a double layer of buttered aluminum foil and steam them for 2 hours, making sure to check them once in awhile so that the mold does not dry while it cooks. Pour it on a serving dish and serve hot.
Feeds 4 – 6 people.
