Sausage Frittata

Sausage Frittata Recipe

 

4 servings

Ingredients
1 cup thick cream
8 eggs, lightly whisked
black pepper
30 grams butter
2 chopped Scallions
2 tablespoons chopped fresh basil
1 red pepper, finely chopped
4 roasted sausages, cut into thin slices
˝ cup (60 grams) grated Manchego cheese.

Preparation

1. In a bowl beat the cream, the eggs and black pepper until they’re thoroughly mixed Melt the butter in a heavy 22 cm diameter frying pan. Pour the egg mix and cook over medium heat. With a spatula raise the frittata so the uncooked part flows down to the frying pan.

2. Sprinkle the Scallions, basil and red pepper. Then arrange the sausages and sprinkle the cheese. Set the frittata below a pre-heated roaster and cook until the cheese melts and the frittata is ready. Serve right away.

Serving suggestions
Serve with green salad and hot brown bread.
