Ingredients
- Total amount of soluble solids = 6.5 Brix degrees
Amounts
- White sugar – 10 kilograms
- Citric pectin – 80 kilograms 0.8% of the amount of sugar)
- Citric acid – 20 grams (0.2% of the amount of peeled fruit)
- Potassium sorbate – 6.99 grams (0.5% of the amount of jam)
- Sodium benzoate – 6.99 grams (0.5% of the amount of jam)
Quality Parameters
- Total amount of soluble solids – 65 Brix degree
Outcome – Peeled Fruit 14.3 kilograms of jam = 1.43 kilograms of jam /kilograms of conditioned fruit.
