Sabayon Sauce
Ingredients: 2 egg yolks 55 gr. of sugar A good pinch of maranta 110 ml of strong black coffee
Preparation: Beat the egg yolks, the sugar and the maranta in a small bowl until a thick white cream is obtained. Put this bowl over a pot of boiling water at low heat and gradually go adding in the coffee and mixing until the mixture thickens.
Serves 4 – 6 people.
