Royal Soufflé Recipe
Ingredients: ¼ liter of milk 25grs of butter 4 eggs 100grs of conserved fruit 2tsps of apricot jam 30grs of cornstarch 50grs of biscuits 1 cup of kirsch 70grs of sugar 25grs of powdered sugar
Preparation: Mix the cornstarch, the sugar and the jam in a container, after add the cold milk and cook at a low flame, stir with a hand blender for 2 minutes, until you get a thick cream. Remove from fire and add the egg yolks, the butter, the conserved fruit cut in slices and the biscuit cut in pieces, mix lightly and add the egg whites which should be beat till stiff.
Butter and flour a tray, pour the mix into the tray, cook it in a double sauce pan and once the water of the double sauce pan boils remove from fire and place it into the oven, let it cook for 25 to 30 minutes. Serve in the same tray in which it was cooked
