Ricotta Mousse with Strawberries

The classical prescription with cheese acquires a special importance when is surrounded with an aromatic sauce of strawberries. 

Ingredients
½ kg of cheese
3 lemons
3 tbsp of sugar
3 fine leaves of fish glue
3 eggs, separated the clear one of the yolk

Sauce
200 g of wild strawberries (or of strawberries)
50 g of sugar

Preparation

  1. Beat the yolks along with the sugar; add to the mixture ricotta, the skin elegantly cut in pieces of a lemon and the leaves of fish glue, diluted in the juice of the hot lemons, after soaking them in cold water and drain them. Introduce it in the refrigerator. 
  2. Beat the clear stiff strong and to incorporate them to the mixture before it hardens, working with a spatula with a lower movement up
  3. Pour the prepared previous in a mold and to introduce it in the refrigerator, where there will be that to maintain it lasting as a minimum 12 hours.
  4. Prepare the sauce. Pass the strawberries by a Chinese strainer and to put the puree obtained in a ladle; incorporate him the sugar and the adequate consistency. Put out the fire, add a gobbet of butter and remove it. Leave the sauce be chilled. 
  5. Serve the mousse of ricotta, surrounded with the sauce of cold strawberries. 

If it devises in a time of the year in which there is not strawberries neither fresh strawberries, suppress the sauce and serve the preparation cover with a lemon cream, that can be prepared mixing 1 entire egg with 100 g of sugar, 100 g of butter softened and the juice and the peel of 1 lemon. This prepared is cooked in a double sauce pan until it thickens, to spread it on the mousse.
