Red Strawberry Mousse

This preparation, with a peculiar flavor, remains perfect accompanied with a simple sauce Chantilly. 

Ingredients
500 g of wild strawberries
175 g of sugar
250 ml red wine
5 leaves of fish glue
50 ml whipped cream

Chantilly Cream
200 ml whipped cream
4 tbsp of whole milk

Decorate
Various berries

Preparation

  1. Cook the strawberries, along with the sugar and 1,5 dl of red wine, until they be undone (some 15 minutes).Pass the mixture by a Chinese strainer. 
  2. Dilute in the remaining wine, heated slightly, the fish glue, soaked previously in cold water and well drained. Incorporate this mixture al puree of strawberries. 
  3. Mount 5 dl of cream of milk and to add it al prepared previous. Turn the mixture in the mold and to maintain it in the refrigerator up to now to serve it. (To jell, will need as a minimum some 4 hours.) 
  4. When it should serve the preparation, mix the 2 dl of cream of milk to mount with the milk and beat it until it acquires a dense consistency. If it is wanted to incorporate a little sugar glaze and to beat again to surround the mousse with this sauce and to decorate it with the strawberries.
