Raspberries with crisps
- For: 6 servings
- Time: 60 minutes
Ingredients: 250 grs chopped almonds 30 grs flour 4 egg whites 300 grs sugar 200 grs raspberries Vanilla
Preparation:
- To make a raspberry coulisse, mix these with 50 grs of sugar and pass through a very thin strainer to make a very thin puree.
- To make the crisps, mix the chopped almonds with 250 grs of sugar, add also the flour and vanilla, mix them all well and add them one by one stirring with a spatula until you get a complete mix.
- With the help of a wooden spoon make the crisps pouring the right amount on each buttered plaque.
- Place into a high tempered oven until they harden.
- Remove from the oven and once you remove them from their mold curve them a little to give it a special crisp look.
