Raspberries with crisps

  • For: 6 servings
  • Time: 60 minutes

Ingredients:
250 grs chopped almonds
30 grs flour
4 egg whites
300 grs sugar
200 grs raspberries
Vanilla

Preparation:

  1. To make a raspberry coulisse, mix these with 50 grs of sugar and pass through a very thin strainer to make a very thin puree.
  2. To make the crisps, mix the chopped almonds with 250 grs of sugar, add also the flour and vanilla, mix them all well and add them one by one stirring with a spatula until you get a complete mix.
  3. With the help of a wooden spoon make the crisps pouring the right amount on each buttered plaque.
  4. Place into a high tempered oven until they harden.
  5. Remove from the oven and once you remove them from their mold curve them a little to give it a special crisp look.
