Quince Paste

 

Ingredients
Quince, 4
Water, as much as needed
Sugar, as much as needed

Preparation
Pick out 4 big quince fruits and wash them without peeling. Rub them to take the fur off of them. Then place them inside a casserole and cover them with water. Allow them to cook for 45 minutes approximately. Take them out and let them drain in a strainer. Peel the quince fruit when they are still hot and cut them and get rid of the center part of the fruit. Place the fruit pieces inside a blender and blend until you obtain a thick pasty consistency. Weigh the paste and prepare the same amount of sugar on the side. Place the paste inside a casserole. Cook it on low heat and go adding the sugar in little by little. Mix frequently with a wooden spoon. After about an hour and a half, if you are able to “cut” the paste with the spoon, it is ready. Place the paste inside metallic boxes, cover with a clean cloth and allow it to dry for a few days in a dry and fresh place. Then put it in the refrigerator and eat.
