Process of Elaboration of Caramelized Peanuts

Weighing The Other Ingredients

Sugar: 195 grams (39%)
Water: 50 grams (10%)
Cocoa:
2.5 grams (0.5%)
Vanilla:
2.5 cm3 (0.5%)

Selecting The Peanuts
Select the peanuts you intend to use.

Weighing
Peanuts: 250 grams (50%)

Heating
Place the sugar in a pot along with the water and the cocoa and heat it until it starts to boil.

Adding The Peanuts
Once the water starts to boil add in the peanuts.

Cooking
The peanuts are heated by constantly stirring until it caramelizes for first time. Continue stirring it and the sugar will once again go back to its liquid state; then add in the vanilla extract. Then allow it to solidify a second time and take it off the heat.

Cooling And Separating
The peanuts are placed over a table that is heat resistant and should be quickly separated.

Packaging And Weighing
The caramelized peanuts will need to be packaged once they are completely cooled and are stored in a clean environment.

Sealing
Before packaging the caramelized peanuts, make sure to verify the number of bags your have and that the sealer works.

Storing
The product will need to be stored in a dry fresh place, protected from the sunlight.
