Plum Cake

  • For: one big mold
  • Time: 90 minutes

Ingredients:
250 grs flour
250 grs butter
250 grs candied fruit
250 grs raisins
4 eggs
2 tsps baking powder
250 ml rum
250 grs sugar
Butter

Preparation:

  1. Soak the raisins in the rum for 1 or 2 hours.
  2. Chop the candied fruit in small dice shapes.
  3. Butter a mold and wrap it with cooking paper in its right measurements which should be buttered and floured too.
  4. Place the butter and eggs in a container and beat with an electric beater, add the sugar and beat till fluffy.
  5. Add the eggs one by one and beat well after adding each egg.
  6. Once all the eggs are added mix the fruit carefully so as to not let them go to the bottom of the bowl.
  7. Pour the batter on the mold and make sure it spreads well.
  8. Cook in a preheated 180 degree oven for 1 hour.
  9. It has to expand very much until the borders are toasted.
  10. Remove from mold when it’s warm and cut it the day after.
  11. It can be stored for many days if wrapped with aluminum foil.
