Plum Cake
- For: one big mold
- Time: 90 minutes
Ingredients: 250 grs flour 250 grs butter 250 grs candied fruit 250 grs raisins 4 eggs 2 tsps baking powder 250 ml rum 250 grs sugar Butter
Preparation:
- Soak the raisins in the rum for 1 or 2 hours.
- Chop the candied fruit in small dice shapes.
- Butter a mold and wrap it with cooking paper in its right measurements which should be buttered and floured too.
- Place the butter and eggs in a container and beat with an electric beater, add the sugar and beat till fluffy.
- Add the eggs one by one and beat well after adding each egg.
- Once all the eggs are added mix the fruit carefully so as to not let them go to the bottom of the bowl.
- Pour the batter on the mold and make sure it spreads well.
- Cook in a preheated 180 degree oven for 1 hour.
- It has to expand very much until the borders are toasted.
- Remove from mold when it’s warm and cut it the day after.
- It can be stored for many days if wrapped with aluminum foil.
