Pineapple Dessert Recipe
Ingredients: 1 large pineapple 2 small coconuts 800grs of sugar 8 egg yolks 50grs of almonds
Preparation: Peel and cut the pineapple in slices. Cook it in ½ liter of water at a low flame for 15 minutes. Once cooked strain the pineapple and store the water. The pineapple pulp is mashed with a puree maker. Grate the coconut after having removed the dark outer skin.
Place the water in which the pineapple boiled into the fire and add the sugar, cook until the syrup thickens. Add the pineapple and the coconut and cook at a low flame. Stir it until you can make a ball out of it and can see the bottom of the container. Remove from fire and add the slightly beat egg yolks, stir well for the yolks to be well absorbed. Place on the fire again, stir until the cream thickens. Continue stirring away from the fire until it has consistency. Toast the almonds, peel them, cut them horizontally and toast them slightly. Turn the dessert on a tray and decorate the surface with the toasted almonds.
