Ingredients
6 egg whites
A pinch of salt
500 grams of confectioner’s sugar
2 tablespoons of instant coffee
4 teaspoons of corn flour
2 teaspoons of vinegar
Toasted almonds, slightly chopped to decorate
Double whipped cream
Truffle sauce, for serving
Preparation
- If you have a gas oven, preheat it at 230 degrees, if you are using an electric oven, preheat it at 150 degrees.
- Beat the eggs with the salt. Add in the sugar in small amounts while constantly stirring. Once all the sugar has been mixed in, add in the instant coffee, the corn flour, and the vinegar. Pour this into a 20-centimeter mold.
- With a gas oven, lower the temperature down to the minimum and put the pie in and bake for 1 ½ hours or until it is golden on the top.
- With an electric oven, put the pie in to bake for 45 minutes. Turn the oven off and let it sit with the door shut for one hour.
- When the Pavlov pie is ready, take it out of the oven and let it cool. Place the whipped cream on the to and pour the truffle sauce over it and garnish it with the almonds.
