Papaya and Melon Jam

Ingredients for 2 liters
1 small melon
1 papaya
800 grs of sugar
2 lemons
1 spoon of pistachios (totally peeled)

  • Marinating time: 2 hrs
  • Preparation time: 40 min
  1. Split the melon in half and withdraw the seeds. With a spoon withdraw the pulp and cut it into small pieces.
  2. Split the papaya in half and withdraw the seeds. Peel the papaya and cut into small pieces.
  3. Mix the papaya, melon and sugar together. Leave to marinate for an approximate of 2 hrs.
  4. Wash 1 lemon with hot water, grate it. Squeeze both lemons out and smash the pistachios.
  5. Wash the crystals recipients with hot water, and let them drip dry.
  6. Mix the grated lemon peel, lemon juice, and pistachios with the melon and papaya pulp. Cook it until boiling point. Keep stirring the mixture and cook it on a low flame for another 4 min until it turns into jam.
  7. Fill the crystal recipients with the jam and close them immediately. The mousse will last for about 3 months in a fresh place.
