Orange and Brandy Sultanas Cake Recipe
Ingredients 125 grams of melted butter 3 cups of sultanas ½ cup of brown sugar 2 tablespoons of orange jam 1 tablespoon of grated orange skin 2 eggs ¼ cup of brandy, plus 1 and ½ additional tablespoon ¾ cup of white flour ¼ cup of all purpose flour Almonds and cherries cut in big pieces for decoration
- Preparation time: 20 minutes
- Baking time: 45 minutes
Preparation
- Preheat the oven at a temperature of 150 degrees C. Grease two deep rectangular 8 by 26 centimeter molds with melted butter or oil. Cover the base and the walls of the mold with wax paper.
- In a big bowl mix the butter, the sultanas, the brown sugar, the jam, the grated orange skin, the eggs, ¼ cup of brandy and both flours. Stir all the ingredients with a wooden spoon well.
- Uniformly spread the mixture onto both molds and smoothen out the surfaces. Decorate the cakes with the almonds and the cherries. Bake them for 45 minutes or until when poking a wooden pick into them, it comes out clean. Sprinkle the rest of the brandy over the prepared cakes, then cover them with aluminum foil and allow them to cool in the molds.
