Orange and Almond Tart

Ingredients Dough 150gr biscuits 3 oranges 275gr sugar 150gr grated almonds 1tbsp rum 6 eggs
Decoration 4 or 5 oranges Chopped and toasted almonds 200gr preserves
Preparation
- Shred the biscuits and mix with the orange extracts.
- Grate the orange peel and add it to the mix with 250gr of sugar, add the grated almonds and 1 tbsp of rum.
- Stir the entire mix well.
- Beat the egg whites until stiff and add little by little.
- Pour the mix into a well buttered and floured mold and let it cook for 50 minutes at a medium heat oven.
- During this time peel oranges and separate them by sections.
- With 150gr of sugar and the extract of two oranges, make a syrup, drunken the biscuit lightly, which should be cold by that time, place the orange sections in the shape of fans covering the whole surface.
- Decorate the borders with the chopped and toasted almonds.
- Cover the oranges with a glazed orange or apricot preserves.
Practical advice The frosting is prepared by boiling 200gr of preserve with 1 tbsp of sugar and 4 of water. Once it has been boiled for 10 minutes, pass through a strainer and you glaze the oranges with the help of a small paint brush.
