Nut and Banana Bread Recipe
Ingredients 125 grams of softened butter 1 cup of brown sugar plus 1 additional tablespoon 3 eggs 1 and ½ cups of whole-wheat flour ½ cup of grated coconut, plus 2 additional teaspoons 2/3 cup of mashed bananas ½ cup of milk ¼ cup of macadamia nuts, toasted without salt and grinded ½ teaspoon of varied spices
Preparation
- Preheat the oven at a moderate temperature of 180 degrees C. Grease a rectangular 14 by 21 by 7 centimeter baking pan with melted butter or oil and cover the base of the pan with wax paper.
- Place the butter, 1 cup of sugar, the eggs, the flour, ½ cup of coconut, the mashed banana, and the milk in a bowl and beat with an electric mixer at the lowest speed until all the ingredients are well mixed. Then turn the speed of the mixer up a notch and continue mixing it for another 2 minutes or until the mixture has become homogenous and has changed color.
- Use a spoon to put half of the mixture in the mold. Mix the nuts, the spices and the sugar and the rest of the coconut. Sprinkle half of this mixture over the dough, then smooth out the surface and then sprinkle the rest of the nut mixture into it. Bake for 1 hour or until when poking it with a wooden pick, it comes out clean. If during the baking time the cake begins to brown a bit too much, cover it lightly with aluminum foil.
