Norwegian Tortilla

  • For: 6/8 servings
  • Time: 60 minutes

Ingredients:
4 eggs
400 grs sugar
100 grs glazed sugar
A 20cm in diameter bought biscuit
1 liter of the ice cream of your preference
1 cup Grand Marnier

Preparation:

  1. To prepare the biscuit in the shape of a box, make a horizontal cut closer to the base than on the surface and on the top part cut a smaller circular shape, leaving 2 cms of “frame”. Place this “frame” on top of the already set base on a serving tray and wet with some drops of grand Marnier.
  2. Mash the ice cream a little with a fork to soften it and fill in the biscuit covering it afterwards with the circle that is left, sprinkle this center with the grand Marnier and place all the mix into the freezer to harden the ice cream again.
  3. On the meantime, heat up the oven in a very high heat and prepare the tortilla. For that you must beat the egg yolks with the grand Marnier and on the side beat the eggs and sugar until stiff.
  4. Mix the egg whites with the egg yolks.
  5. Remove the ice cream filled tart from the freezer and cover it with the mix completely.
  6. Sprinkle glazed sugar on it and put into the oven for a few minutes until they brown.
  7. Although the oven is very hot the biscuit and egg protect the ice cream from melting completely.
