Moles Eggs Recipe
Ingredients: 24 egg yolks 16 tbsps of powdered sugar 18 nuts Powdered cinnamon
Preparation: Place the eggs and the sugar in a container and beat well until the egg yolks change color and become somewhat white. If done by hand it will take 20 or 30 minutes, but if done with a hand blender it only takes 3 to 4 minutes and is much more comfortable.
Put the mix into the fire in a double sauce pan and let it cook slowly mixing it without stopping. Make sure the water in the double sauce pan doesn’t boil too strongly.
If when stirring you can see the bottom of the container it means that the cream is already thick, the moles eggs are ready. Pour them into a porcelain or glass tray or in small individual containers. Place them in the fridge until the moment of serving. Decorate the surface with the nuts which should be chopped in big sizes and sprinkle the powdered cinnamon on top.
