Mocha Mousse

 

Adding in coffee to chocolate dishes gives it a bit of a “bitter” taste, meaning you can use less expensive chocolate and pastry coverings.

Ingredients:
110 gr. of chocolate covering
1 heaping tablespoon of instant coffee
1 tablespoon of water, or 1 or 2 tablespoons of black rum
4 eggs, separated

Preparation:
Break the chocolate into pieces and place it in a small deep pan with the coffee, the water or rum. Place the pan over a pot of boiling water and leave it there until the chocolate melts.

Once the chocolate melts remove it from the heat, add in the egg yolks and beat them with the rest (one by one). On the side beat the egg whites until they are fluffy, and then add in the chocolate mixture. Pour everything into a serving dish and put it in the refrigerator for at least 1 hour before serving.  

Serves 4 people.
