Melon Straw

 

In the elaboration of this straw the preparation of the syrup is omitted and sugar is utilized glaze.

Ingredients
1 kg of octopus of melon
200 g of sugar glas
4 milk cream tbsp to mount
1 lemon juice spurt
2 small glasses of kirsch

Preparation

  1. Crush the octopus of the melon along with the juice of lemon and the sugar glas; to pass the mixture by a Chinese strainer. 
  2. To Incorporate the cream of milk and the kirsch al purée of melon,remove well the mixture and to freeze it in straw, as has been indicated for the straw of tomato, or well pour it in a tray of porcelain, crystal or plastic and to introduce the container covered in the freezer, where will be maintained some 3 hours, removing the prepared every 30 minutes with a holder, or beating it a couple of times.
  3. Leave it to freeze completely or to the point desired it can be convenient to remove it of the freezer and to leave it in the refrigerator a while before serving it. 

This straw is of dessert, but can be dared to serve it as elegant entrance: form balls and arrange them in a dish dusted with a little recently shattered pepper and surrounded by chocolate chips of mountain ham.
