Marron Glace Ice Cream
Ingredients 100 gr Marron glace chestnuts 1 cup brandy
English Cream ½ lt milk 3 egg yolks 50 gr sugar 1 tspn vanilla 2 tbspn brandy
Preparation
- Mash the chestnuts until they form a soft puree and add the brandy.
- Let it sit for 2 hours.
- Boil the milk with the vanilla.
- Beat the egg yolks with sugar and mix in the hot milk.
- Put on low flame until it thickens without it boiling. And let it cool
- Add the chestnut puree and refrigerate.
For Christmas it can be placed in a truck like mold and decorate with raisins.
