Ingredients
Mandarins, 1 kilogram
Sugar, 2 kilograms
Water, as much as needed
Preparation
Place the mandarins with the peel in a pot with an abundant amount of water and cook over low heat, covered for 25 minutes. Uncover the pot and continue cooking until the fruit is very tender. Cool and then blend the fruit. Add in the sugar and stir in until it dissolves. Increase the heat on the stove and when it starts boiling, check to see if the jam is ready but make sure to first take the preparation off of the heat. Get rid of the foam with a strainer and bottle in glass jars. Keep in the refrigerator.
