Use machinery and utensils that have been fabricated with corrosion resistant materials (stainless steel).
- Plastic containers will need to be made out of synthetic material specifically designed for food products.
- The recipients used in the acetic fermentation will need to be washed with bisulphite sodium (one teaspoon for every 10 liters of water) to avoid growth of other types of organisms.
- The bottles and the top will need to be new. If you are using second hand or already used bottles, these must be washed and disinfected.
