Lemon Meringue Pie Recipe
Ingredients 1 ½ cups of flour 125 grs of sugar 3 teaspoons of cold water
Filling ½ cup of cornstarch 1 cup of lemon juice 2 teaspoons of grated lemon peel ¾ cup sugar 6 egg yolks 30 grs of butter 6 egg whites Glazed sugar
Preparation
- In a cooking bowl sift flour add glazed sugar, butter and water mix all the ingredients until obtaining smooth dough.
- Refrigerate dough for 1 hour before using.
- Pre heat the oven at 180c spread the pie dough on the pan and bake for 20 minutes, remove from the oven and let it cool down.
- In small pot mix water with cornstarch, add lemon juice, sugar. Let it boil in low fire until it thickens remove from fire and beat in egg yolks, melted butter
- Let the lemon cream cool down for 1 hour before using.
- Pour the lemon cream over the bake pie.
- With an electric mixer beat egg whites until obtaining a solid meringue add a little sugar.
- Decorate the lemon pie with meringue, bake in the oven for 10 minutes.
