Lemon Breaded Calf Cutlet Recipe

Ingredients 2/3 cup grated Parmesan cheese 4 tablespoons thick bread crumbs 1 tablespoon grated lemon peel black pepper 4 thin breaded calf cutlets flour 2 lightly whisked eggs 90 grams butter Lemon cream sauce 3 tablespoons beef broth 1 tablespoon lemon juice ½ cup thick cream
Preparation
1. In a casserole mix the cheese, bread, the grated lemon rind and the pepper. Cover the cutlets with flour, dip the them in the eggs and crumb them.
2. In a frying pan fry the cutlets in butter for 2-3 minutes each side. Take them out of the heat and keep warm.
3. To make the sauce, pour the broth and the juice on the same frying pan and let boil until it reduces to half. Take it out of the heat and add the crème. Pour over the cutlets.
Serving suggestion Serve with potatoes, zucchinis and carrots.
