Lemon biscuit

Ingredients Biscuit 3 eggs 6 tbsp of flour 6 tbsp of sugar 2tbsp of water ½ tsp of baking soda 1 lemon extract and 1 grated lemon
Cream 2 eggs 1 cup of sugar 50gr butter 3 lemons
Preparation
- Beat the yolks with the sugar and water until fluffy.
- Add the lemon extract and the grated lemon.
- Add the stiff egg white and finally add the flour together with the baking soda to the mix.
- Pour the mix into a buttered mold.
- Place the mold into a low temperature oven for half hour.
- Cut the biscuits into disc shapes.
- Spread half of the cream into the biscuits and spread the rest of the cream on top.
Cream
- Beat the eggs with the sugar.
- Add the extract and the grated lemon, continue mixing.
- Add the melted butter.
- Place on fire in a double sauce pan, continuing to stir until it starts thickening.
- Remove from fire and let it cool off (it thickens more when cold)
Practical advice Decorate with skimmed milk or meringue.
