Lemon biscuit

Ingredients
Biscuit
3 eggs
6 tbsp of flour
6 tbsp of sugar
2tbsp of water
½ tsp of baking soda
1 lemon extract and 1 grated lemon

Cream
2 eggs
1 cup of sugar
50gr butter
3 lemons

Preparation

  1. Beat the yolks with the sugar and water until fluffy.
  2. Add the lemon extract and the grated lemon.
  3. Add the stiff egg white and finally add the flour together with the baking soda to the mix.
  4. Pour the mix into a buttered mold.
  5. Place the mold into a low temperature oven for half hour.
  6. Cut the biscuits into disc shapes.
  7. Spread half of the cream into the biscuits and spread the rest of the cream on top.

Cream 

  1. Beat the eggs with the sugar.
  2. Add the extract and the grated lemon, continue mixing.
  3. Add the melted butter.
  4. Place on fire in a double sauce pan, continuing to stir until it starts thickening.
  5. Remove from fire and let it cool off (it thickens more when cold)

Practical advice
Decorate with skimmed milk or meringue.
