Honey Crepes
Ingredients 500 ml milk 300 gr flour 10 gr yeast 1 whole egg & 1 yolk 1 tspn of coffee 120 ml cream milk 500 gr butter Honey and salt Frying oil
Preparation Heat the milk; pour 250 ml of milk in a bowl. Add the yeast little by little and mix well for it to dissolve.
Add 150 gr of flour and mix well until its an even batter.
Cover to bowl with a kitchen towel. Let it sit at room temperature until the dough doubles or triples in volume.
Once the dough rose as much as possible add one egg and one yolk, the melted butter and milk cream. Mix well.
Pour the rest of 250 ml of milk, 150 gr of flour and sugar. Beat everything well. Cover again and let it sit for 30 min.
Heat a pan with some oil, and put some batter to cover the pan, cook well on each side and take out, repeat with the whole batter. Pile the crepes on a plate putting a thing layer of butter between them, once they are finished pour honey over them before serving.
