Honey Cake

Ingredients: 350 grs of flower 40 grs of raisins ¼ of a cup of orange jam 3 eggs 1 cup of honey 60 grs of sugar 1 grated lemon peel 1 baking soda bag 1 pinch of cinnamon 1 pinch of ground clover 1 pinch of salt 60 grs of chopped almonds
Preparation Mix the orange jam and raisins with a little bit of flower. Beat the egg yokes with the butter and sugar until you obtain a foamy mixture; go stirring slowly and add the grated lemon peel, honey and coffee to the mixture. In a different bowl combine together the flower, baking powder, ground clover and salt. Slowly while you stir go pouring these dry ingredients into the other bowl. Then add the raisins and jam to the entire mixture. On a side beat the egg whites until they stiff. Slowly while you stir go adding the egg whites to the entire mixture. Pour the paste inside the baking pan after you butter up and sprinkle flower in the baking pan. Decorate the pan with the almonds and place it in the already preheated oven (at 175 degrees Celsius) for 60 – 70min.
