Honey and Lima Ice Cream Recipe
A select ice cream with a fine honey aroma to it.
Ingredients 2 limas 50 ml of water 50 grams of solidifying sugar 2:1 (for 2 parts of fruit, 1 part of sugar) 50 grams of clear creamy honey 200 grams of cream
- Preparation time: 20 minutes approximately
- Cooling time: 1 hour approximately
- Freezing time: 7 to 8 hours
Preparation
- Wash the limas and dry them with a clean dishtowel.
- Grate the peel of the limas.
- Squeeze the limas into a bowl.
- Boil the water for 1 minute, while constantly mixing with the lima peel and the solidifying sugar, then add in the lima juice and the honey. Boil it for ½ minute more. Take it off the stove and let it sit and solidify for 1 hour.
- Put the cream in a bowl and beat it by hand or with an electric mixer.
- Add in the cooled sugar preparation little by little and very carefully to the whipped cream.
- Immediately put the mixture into a plastic recipient for the freezer of 1 liter of capacity and freeze for 7 to 8 hours at -18 degrees Celsius at least. Stir very carefully every 2 hours, stirring the already frozen exterior layers back and forth.
