Hazelnut Ice Cream

Ingredients
2 egg yolks
100 gr sugar
1 tbspn powder vanilla
80 gr hazelnuts
250 ml milk cream

Preparation

  1. Toast the hazelnuts and remove the skin that covers them. Grind very finely.
  2. Beat the yolks with the sugar until it forms a spongy texture.
  3. Beat the milk cream
  4. Mix all together and refrigerate.

The ice cream can be served with small chunks of marron glace walnuts.

Alternative
Ingredients
100 gr ground hazelnuts
4 egg yolks
150 gr sugar
500 ml milk
200 ml milk cream

Preparation

  1. Boil the milk with ground hazelnuts. Let the cook for 30 min.
  2. Beat the egg yolks with the sugar until it forms a smooth spongy texture.  Add to the milk, put on low flame and take off the fire before it boils. Let it cool.
  3. Beat the milk cream and add to the original mix.
  4. Refrigerate until ready.
