Hazelnut Ice Cream
Ingredients 2 egg yolks 100 gr sugar 1 tbspn powder vanilla 80 gr hazelnuts 250 ml milk cream
Preparation
- Toast the hazelnuts and remove the skin that covers them. Grind very finely.
- Beat the yolks with the sugar until it forms a spongy texture.
- Beat the milk cream
- Mix all together and refrigerate.
The ice cream can be served with small chunks of marron glace walnuts.
Alternative Ingredients 100 gr ground hazelnuts 4 egg yolks 150 gr sugar 500 ml milk 200 ml milk cream
Preparation
- Boil the milk with ground hazelnuts. Let the cook for 30 min.
- Beat the egg yolks with the sugar until it forms a smooth spongy texture. Add to the milk, put on low flame and take off the fire before it boils. Let it cool.
- Beat the milk cream and add to the original mix.
- Refrigerate until ready.
