Ingredients
¾ cup of flour
90 grams of ground hazel nuts
1 lightly whipped egg
2 teaspoons of vegetable oil
2¼ cups of milk
Orange and Lime Adornment Dessert
1 lime or lemon
½ cup of sugar
¼ cup of wine with ginger
2 oranges (without the peel and seeds and in pieces)
Recipe Preparation
- Sift the flour, add the ground hazelnuts. Make a hole in the center and add the egg, the oil and milk, mix well until you get smooth semi liquid paste. Cover and let it rest for 30 minutes.
- Decoration: With the vegetable peeler, peel the lemon or lime (already washed), cut part of the peels in extremely thin slices and leave aside. Squeeze the lemon or lime into a pot together with the sugar and wine with ginger. Cook on an average flame, stirring until the sugar dissolves and the mixture boils. Lower the flame and cook for another 4 minutes. Withdraw from the fire and add the sliced lemon peels along with the orange pieces. Let it cool a bit.
- Crepes: Pour 2-3 tablespoons of the dough in a thick hot buttered pan. Lower the flame and flip the crepe when it turns gold on one side; let it golden on the other side. Try to keep them hot while you make them all, until you finish with the dough (approximately 8 crepes).
- Bend each crepe into a triangle. Serve the Hazel Crepes with Orange immediately, 2 in each plate and adorn them with the lemon-lime syrup, sliced peels and orange pieces.
