Granita

In order to make this chilled drink you will need to use a darkly toasted European coffee bean; as its name indicates, it should have a granular look to it. You can serve it as it is, or crown it with a tablespoon of whipped cream or vanilla ice cream and a tablespoon of coffee liqueur.

Ingredients:
85 gr. of ground coffee
570 ml of boiling water
140 ml of cold water
140 gr. of sugar

Preparation:
Place the ground coffee in a jar and place the jar in a pot of water over very low heat. Mix the water boiling in the jar, stir well and allow the coffee to infuse for 30 minutes. Strain it over a bowl through a paper filter.

Put the cold water and the granulated sugar in a small pot and place it on low heat until the sugar has dissolved; then turn up the heat and when the water boils, allow it to boil for 5 minutes. Take it off the heat, add in the coffee and mix well. Allow it to cool.

Place the bowl in the freezer and take it out every 30 minutes and beat the mixture to avoid crystals from forming inside of it. Once the granita has frozen, move it to a plastic recipient or another appropriate recipient, cover it and keep it until you wish to drink it.

Serves 4 people.
