Geneva Biscuits (basic recipe)

  • For: 6 servings
  • Time: 60 minutes

 

Ingredients:
4 eggs
2 egg yolks
150 grs strained flour
1 tsp baking powder
60 grs butter
150 grs sugar

Preparation:

  1. Beat the 4 eggs, the 2 egg yolks and sugar vigorously until fluffy and double its volume (it will be ready when there is no foam on the surface).
  2. Add the melted cold butter mixing slowly; add the well mixed flour and baking powder.
  3. Butter a mold and wrap it with aluminum foil which should be buttered too.
  4. Pour the batter into the mold and cook for 10 minutes at a 200 degree oven.
