Ingredients:
250 grs butter
3 eggs
100 grs ground almonds
250 grs flour
½ cup rum
200 grs sugar
Cream
½ liter milk
3 egg yolks
1 tbsp cornstarch
50 grs raisins
125 grs sugar
Preparation:
- Knead the butter.
- Beat the eggs with sugar until it’s a very light color and mix with the butter.
- Join the almonds with the flour and mix with the egg cream lightly, mix always with an involving movement.
Cream
- Soak the raisins in the rum, boil the milk and beat the egg yolks with the sugar and cornstarch in a pot.
- Pour the boiling milk on top of the egg yolks and stir continuously for the mix to thicken.
- Butter and flour a 30 cm mold in diameter.
- Add the rum to the almond cream, place half of it into the mold, put the pastry cream on top and place the raisins in the cream and cover with the rest of the almond paste and cook at a 170 degree flamed oven for an hour.
