Fruit Marzipan
Ingredients: 225 grs sugar 6 tbsps water 1 egg white 175 grs raw ground almonds 50 grs liquid glucose 1 tbsp lemon extract 225 grs glazed sugar
Preparation:
- Put the sugar and the water in a pot and cook at a low flame until it melts
- Stop stirring and let it boil for it to thicken
- Remove from fire and add the almonds and glucose.
- Let it cool of a little and add the lightly beat egg white.
- Place at a low flame again and stir continuously for 2 or 3 minutes.
- Add the lemon extract.
- While it cools off, don’t stop stirring, add the glazed sugar slowly until you get a soft paste.
- Wrap it with aluminum foil and store in the fridge for no more than seven days or until you use it.
- To make the fruit you need food coloring, clovers, and a little sugar.
- Separate the dough in different pieces and add food coloring to each.
- Knead each color well with the pastes so you can have them in well mixed colors.
- To make apples or pears you just have to make little balls and put the clovers as the bottom of each fruit, to make bananas you have to sprinkle them with sugar and place them in an oven for a little for them to brown.
- You can make all shapes you want according to your imagination and creativity.
