Almond Cake with Dried Fruits

Ingredients 250gr ground almonds 250gr ground sugar 5 eggs 3 lemons Butter Dried fruit 6 tbsp glazed sugar
Preparation
- Mix sugar with 5 egg yolks.
- When the mix is soft, add the ground almonds, 2 lemon extracts and 1 grated lemon peel.
- Beat 2 egg whites till stiff and add them to the dough.
- Extend ¾ of the batter on a buttered tray.
- Chop the dried fruit and spread them on the batter.
- Cover them with the rest of the batter.
- Place in a low flamed oven for 50 minutes.
- Dilute 6 tbsp of glazed sugar in the lemon extract and heat up until you have a thick and bright cream. Place over the almond cake so as to fill the holes at the top of the cake and covers it lightly.
- Let it dry and cool off before serving.
Practical advice Instead of the ground almonds, you can also use grated coconut; the cake isn’t as soft though.
