Almond Cake with Dried Fruits

Ingredients
250gr ground almonds
250gr ground sugar
5 eggs
3 lemons
Butter
Dried fruit
6 tbsp glazed sugar

Preparation

  1. Mix sugar with 5 egg yolks.
  2. When the mix is soft, add the ground almonds, 2 lemon extracts and 1 grated lemon peel.
  3. Beat 2 egg whites till stiff and add them to the dough.
  4. Extend ¾ of the batter on a buttered tray.
  5. Chop the dried fruit and spread them on the batter.
  6. Cover them with the rest of the batter.
  7. Place in a low flamed oven for 50 minutes.
  8. Dilute 6 tbsp of glazed sugar in the lemon extract and heat up until you have a thick and bright cream. Place over the almond cake so as to fill the holes at the top of the cake and covers it lightly.
  9. Let it dry and cool off before serving.

Practical advice
Instead of the ground almonds, you can also use grated coconut; the cake isn’t as soft though.
