Fruit and Nut Meringue

Ingredients
6 egg whites
475 grams of sugar
180 grams of dry dates, chopped
125 grams of chopped pecans
125 grams of dark semisweet chocolate, in pieces
60 grams of crystallized ginger, chopped
Whipped cream, for serving
Fresh fruit, for serving

Preparation

  1. Beat the egg whites and gradually go adding in the sugar while constantly mixing. Add in the rest of the ingredients.
  2. Pour the mixture into 7 centimeter circles in a baking pan, covered with baking a baking sheet and bake at a moderate temperature of 170 degrees for 40 to 50 minutes or until wooden pick inserted in middle comes out clean.
  3. Allow it to cool in the same baking tray. If you want the meringues can be frozen at this moment.
  4. To serve, pile up three meringue circles, filling each layer with whipped cream. Decorate with your choice of fresh fruit.

Serves 4 to 6.
