Formulas to calculate the percentage of overrun
Overrun calculated in base of the volume.
- % Of overrun = final volume of the ice cream – volume of the mixture x 100.
- For example, lets say you elaborate 5 liters of the mixture, and then from the mixing process, you will obtain 6.5 liters of ice cream. Then the overrun is calculated as such:
- % Of overrun = 6.5 – 51 x 100 = 30%
Overrun calculated based on the weight.
- % Of overrun = weight volume of mixture – final weight of the ice cream x 100.
- For example, before mixing, a mixture of ice cream in a container of one liter weighs 950 grams. Then after mixing, this same mixture in a container of one liter weighs 700 grams. Then the overrun is calculated as such:
- % Of overrun = 950 – 700 x 100 = 35.71%
