In the elaboration of tree tomato jam you need to keep the following things in mind:

  • Scalding: This must be done from five to ten minutes making sure that the peel does not break.
  • Cooking: The mixture must be constantly stirred to avoid it from burning, and to obtain a uniform mixture with the rest of the ingredients since due to its high content of pectin mixing is a bit difficult and has a tendency to burn easily.

Remember that since tree tomatoes have a high amount of pectin it is not necessary to add pectin in when making this jam.
