Decorating Cakes with Ribbon

 

The ribbon can be placed around the whole cake, held by glaze. Finish the union of these ribbons with some trinkets.

To make the effect of passing the ribbons through holes proceed according to the following instructions:

  • To the work previously mentioned add little vertical, equidistant glaze chords to give it the desired effect.
  • it can also be done with small pieces of ribbons of about 2cm in length, stuck on the cake in an equidistant form. Practice an embroidering between the parts of the ribbon and join with a glazed chord.
  • Make vertical, equidistant incisions on the covering of the cake, 2mm higher than the thickness of the ribbon. Cut the ribbon in pieces of 2 to 4mm longer than the marked separations and round out the points, stick them into the incisions border the space between the ribbons with glaze.

The quality that these filigrees express gives to it a very special element for anniversary, wedding and communion cakes.

Technique for Making the Filigrees

Glaze for thin tracing

Ingredients
1 egg white
250 grs powdered sugar
1 tsp gum Arabic

Preparation

  1. Place the egg white in a glass bowl and add the sifted powdered sugar slowly while beating it with a spatula or knife.
  2. Add the gum Arabic with some more sifted sugar and continue mixing.
  3. The beating must always be done by hand.
  4. All the recommendations for making the common royal glaze are useful.

Steps to follow
To make the filigrees, here are some steps to follow.

  1. Copy the chosen design onto a white paper and place on top of a lamina of Styrofoam.
  2. Place a cellophane paper on top and hold it down with pins or adhesive tape.
  3. Place the glaze on a decorating sleeve with a thin, small filter tip #0 or 00.
  4. Outline the borders of the filigrees trying to make whole lines and not cut lines.
  5. Let it dry very well, at least for a day.
  6. Un-stick it very carefully and store it in conveniently conditioned boxes.
  7. Stick them onto the cake in an oblique form with little dots of glaze.
  8. Give thoroughness to the joining with a chord dot.
  9. Since the filigrees break easily it is always convenient to make more than necessary.

Note The drawing can also be traced on top of butter paper; after proceed to butter it and make the filigrees directly on it.
